Sloppy Joes

Cook time 45 minutes

What you’ll need:

  • 2 T olive oil

  • 1 onion, finely chopped

  • 2 T garlic, minced (about 6 cloves)

  • ½ t salt and ½ t pepper

  • 1 lb ground beef

  • 1 c grated carrot (2-3 large whole carrots)

  • 4 t chili powder

  • 2 t brown sugar

  • 1 t dried oregano

  • ½ t ground red pepper (optional)

  • 1 (28 oz) can crushed tomatoes

  • 2 (15.5 oz) cans red beans, drained and rinsed

What to do:

  1. Heat oil in a large cooking pot over medium-high heat. Add onion and saute for 2-3 minutes until beginning to soften. Add garlic through ground beef to onions. Crumble beef with a wooden spoon and stir. Cook until the meat is browned.

  2. Add grated carrot, chili powder, sugar, oregano, and red pepper. Cook for 2-3 minutes, then stir in the tomatoes. Bring to a boil, reduce heat, and simmer for 10 minutes, until carrots are tender, stirring occasionally.

  3. Using a fork or potato masher, roughly mash one can of the red beans in a bowl. Add the mashed beans and remaining whole beans to the pot. Stir to combine and cook for 1-2 minutes, until heated through. Serve on toasted buns with toppings of choice.

Tips

  • These sloppy joes can be served on buns or bread of choice, with rings of red onion, pickles, and romaine lettuce.

  • For a gluten-free option, serve them  over rice.
