Sloppy Joes

What you’ll need:
2 T olive oil
1 onion, finely chopped
2 T garlic, minced (about 6 cloves)
½ t salt and ½ t pepper
1 lb ground beef
1 c grated carrot (2-3 large whole carrots)
4 t chili powder
2 t brown sugar
1 t dried oregano
½ t ground red pepper (optional)
1 (28 oz) can crushed tomatoes
2 (15.5 oz) cans red beans, drained and rinsed
What to do:
Heat oil in a large cooking pot over medium-high heat. Add onion and saute for 2-3 minutes until beginning to soften. Add garlic through ground beef to onions. Crumble beef with a wooden spoon and stir. Cook until the meat is browned.
Add grated carrot, chili powder, sugar, oregano, and red pepper. Cook for 2-3 minutes, then stir in the tomatoes. Bring to a boil, reduce heat, and simmer for 10 minutes, until carrots are tender, stirring occasionally.
Using a fork or potato masher, roughly mash one can of the red beans in a bowl. Add the mashed beans and remaining whole beans to the pot. Stir to combine and cook for 1-2 minutes, until heated through. Serve on toasted buns with toppings of choice.
Tips
These sloppy joes can be served on buns or bread of choice, with rings of red onion, pickles, and romaine lettuce.
For a gluten-free option, serve them over rice.
