Everyday Bolognese Sauce
Cook time 1 hour
What you’ll need:
2 T olive oil
1 lb ground beef
4 t minced garlic (about 4 cloves)
1 T dried oregano
1 c + ¼ c red wine
1 (28 oz) can crushed tomatoes
2 T tomato paste
Salt and pepper
¼ t ground nutmeg
¼ c chopped fresh basil leaves
¼ c heavy cream
What to do:
Heat the oil in a large skillet over medium-high heat. Brown the ground beef in the oil for 5-7 minutes, crumbling with a wooden spoon.
Add the garlic and oregano. Cook, stirring constantly, for about 1 minute. Add 1 c of the red wine to the skillet and scrape up any browned bits.
Add the tomatoes, tomato paste, 1 T salt, and 1 ½ t pepper and stir to combine. Bring to a boil, then reduce the heat and simmer for 10 minutes.
Add nutmeg, basil, cream, and remaining red wine and simmer for another 10 minutes.
Serve over hot pasta with freshly grated Parmesan cheese.
Tips
If you like a little bit of heat, you can add ¼-½ t red pepper flakes along with the garlic and oregano in Step 2.
Store unused tomato paste in the freezer. Scoop the extra tomato paste out in ~2 T portions and store in ziploc bags as individual portions for other recipes.
