Beef Satay with Peanut Sauce

Cook time 10 minutes

What you’ll need:

  • 1-1.5 lb flank steak (or more for a larger crowd)

  • 2-4 T hoisin sauce (found in the Asian section of the grocery store)

  • 1 t salt

  • Bamboo (or other) skewers

  • ¾ c light coconut milk

  • 3 T soy sauce

  • ¼ c creamy peanut butter

  • 1 T sugar

  • 1 T lime juice

  • 1 ½ t red curry paste (found in the Asian section of the grocery store)

What to do:

  1. If using bamboo skewers, soak them in a pan of water for at least 15 minutes before use.

  2. Cut the flank steak diagonally across the grain into ¼ inch thick slices. Combine the steak with the hoisin sauce in a medium bowl. Marinate in the fridge while the skewers soak.

  3. Meanwhile, prepare the peanut sauce. Combine coconut milk through red curry paste in a bowl. Whisk until smooth.

  4. Preheat the broiler. While broiler heats, thread the steak slices onto the skewers and sprinkle with salt.  Place the skewers on a rack set in a baking sheet lined with foil.

  5. Broil for 3-5 minutes on each side, to desired degree of doneness. Remove steak from skewers.

  6. Serve over rice, and drizzled with peanut sauce.

Tips

  • One pound of flank steak will make about four servings. If you’re planning on more people, you’ll need to increase the amount of steak and hoisin sauce.

  • You can also use skirt steak or flat iron steak, instead of flank steak.
